Lot overview

Arabica from Ngada regency on Flores, grown on volcanic ash soils below Mount Inerie at 1,200 to 1,600 m and dried whole on raised beds for 18 to 22 days with hand turning and hand sorting. Heavy sweetness, berry and cocoa, a rounder body than a washed lot. A small seasonal allocation: what makes Grade 1 goes to specialty buyers, and the rest is offered down the ladder rather than blended into it.

Sorting a natural lot to grade

Natural processing is unforgiving: underripes and overferment show up in the cup, so cherry is floated before drying and the dry lot is hand sorted after hulling. Beds are turned several times a day through the 18 to 22 day window. Moisture is finished at 10.5 to 12.0%, and a 300 g count sets the grade under SNI 01-2907. Grade 1 is genuinely harder to reach on a natural than on a washed coffee, which is why the top grade is the scarce one here and the balance is offered honestly at its own grade.

Allocation and shipping from Flores

Minimum order is a half container, 9.6 MT or 160 bags with GrainPro liners, per grade, because Ngada produces a small crop across fragmented village gardens. Coffee moves by inter-island vessel to Surabaya or Jakarta before stuffing, so lead time is four to five weeks. Harvest runs May to August and allocations are set before picking starts.

Grade is a defect count, not a different coffee. The same island lot is offered from Grade 1 down to Grade 6 under SNI 01-2907, so tell us the row your roast and your cost line need and we quote against it. Specialty lots are graded on the SCA table as well, and the grade you contract is printed on the grading sheet that travels with the container.

How much Bajawa coffee is available per season?

Only a few containers. Ngada regency has a small growing area spread across village gardens, so allocations are agreed with producer groups before the May to August harvest and part of the crop is reserved for existing buyers. The minimum is a half container of 9.6 MT.

What roast level suits this natural dried Flores lot?

Light to medium. Pushing a natural coffee dark buries the fruit and can tip the sweetness into a ferment character, while a lighter roast keeps the berry and cocoa notes that make the lot worth its price. Our roasted version of this coffee runs Agtron 62 to 68 for that reason.

Is the Flores arabica covered by a certification scheme?

It ships under Fairtrade on the producer group certificate, with the transaction certificate number attached to the shipment, plus ISO 22000 and Halal (BPJPH) documentation from our side. Organic conversion is under way in parts of Ngada, but we do not sell the lot as organic until the certificate covers it.
