Lot overview
Smallholder arabica from the Toraja mountains of South Sulawesi, shade dried and wet hulled, then sorted harder than any other coffee we handle. Dense beans, dark chocolate and warm spice in the cup, with the body of a wet hulled coffee and a cleaner finish. Organic certified, with Grade 1 cupping 85 to 87 points and the lower grades quoted for blend volume.
Cup profile and roasting
Full bodied and low in acidity like all wet hulled coffee, but sweeter and cleaner than Gayo, with dark chocolate, warm baking spice, and a long finish. Density from the altitude means it can take a lighter roast than most Indonesian arabica without tasting green, which is why specialty roasters use it as a single origin rather than only as blend weight.
Sorting and grading
Toraja is sorted harder than any other coffee we carry, first on gravity tables at the mill and then by hand, which is what takes the 300 g count to 11 defect values or fewer for Grade 1 and also what slows the lead time to four or five weeks. The same mills supply the lower grades, counted against the same SNI 01-2907 ladder. Moisture is brought to 11 to 12.5% and confirmed in Jakarta before stuffing, and two Q Graders score the sample on the SCA protocol before a lot is offered.
Packing, minimum, and shipping
Packed in 60 kg jute with GrainPro liners, 320 bags to a 20 ft container at 19.2 MT, minimum one container per grade. Loading is through Makassar, the natural port for eastern Indonesia, or Jakarta on consolidated bookings. Harvest runs May to September and certified volume is committed at harvest, so organic contracts are normally booked a season ahead.
Grades we quote on this arabica
Grade is a defect count, not a different coffee. The same island lot is offered from Grade 1 down to Grade 6 under SNI 01-2907, so tell us the row your roast and your cost line need and we quote against it. Specialty lots are graded on the SCA table as well, and the grade you contract is printed on the grading sheet that travels with the container.

Which grades of Toraja arabica do you sort to?
All six, and this is the coffee we sort hardest: gravity tables at the mill followed by hand sorting, which is what takes Grade 1 to the top of our arabica offer at 85 to 87 points and also why its lead time runs four to five weeks. Grade 2 and 3 come from the same mills for blend programmes. Minimum is one 20 ft container per grade.
What cup score does this Sulawesi Toraja coffee hold?
85 to 87 points on the SCA protocol at Grade 1, scored by two Q Graders in Jakarta and re-scored on the pre-shipment sample before sealing. Altitude 1,400 to 1,900 m. Grade 1 defect count 0 to 5 full defects per 300 g. Lower grades carry higher defect counts and are priced accordingly.
Is this Toraja arabica available as certified organic?
Yes, it ships under Organic to EU and NOP rules on the producer group certificate, with the transaction certificate number attached to the shipment, alongside ISO 22000 and Halal (BPJPH) documentation. Certified volume is limited by the certified pool rather than the crop, so book a season ahead.
Why is the lead time four to five weeks?
Because the sorting is slower. Gravity table sorting at the mill is followed by hand sorting to bring the 300 g count down to Grade 1, and the coffee then moves to Makassar or Jakarta for stuffing. Lower grades ship a little faster, and harvest runs May to September, so fresh crop normally ships from July onward.
Should I take Sulawesi or Sumatra for a single origin line?
Sulawesi if you want the cleaner, sweeter side of wet hulled coffee with dark chocolate and spice at 85 to 87 points. Sumatra if you want the savoury cedar and forest floor profile in larger volume at a lower cost. Most buyers order both as 300 g samples at the same grade and cup them side by side before deciding.
