What makes Gayo arabica different
Gayo is planted mostly to Ateng, Timtim, and Gayo 1 and 2 varieties on smallholdings of a hectare or two, usually under shade. Cherry is pulped the day it is picked, fermented briefly, then hulled at 30 to 50% moisture and dried down in the open, which leaves the bean swollen, bluish, and slightly irregular in shape. Cuppers score our Gayo lots at 84 to 86 points. Roasters use it where they want body and a savoury, spice-and-cedar base rather than brightness, and it is the classic backbone of a dark roast blend.
