Lot overview

Toraja green roasted at Agtron whole bean 56 to 65, held back deliberately so the clove, black pepper, and dark fruit of the highlands survive into the cup instead of being flattened into roast character. Organic certified, packed in 250 g and 1 kg valve bags for retail and cafe programmes, whole bean or ground, on the grade of green the programme is priced at.

The roast and how it cups

Agtron whole bean 56 to 65, with 60 to 65 as our default, held back so the clove, black pepper, and dark fruit of the Toraja green survive into the cup instead of being flattened into roast character. It is built for filter, pour-over, and batch brew, where the extra clarity is the reason a buyer pays a specialty price, and that is also why Grade 1 green is the default here.

Organic certification through to the roast

The green is organic certified to EU and NOP standards and the roastery runs a certified organic production window, so the chain is unbroken from cooperative to sealed bag. The transaction certificate accompanies each shipment. Where a buyer needs the certificate in their own name, we set that up with the certifier before the first run.

Packaging, minimum, and lead time

250 g and 1 kg one-way valve bags in 12 kg cartons, private label or unbranded, with 12 months unopened shelf life. Minimum is 500 kg per roast profile and grade, lead time three weeks, and dispatch within seven days of roast. Retail programmes usually start with 250 g bags and a single profile before a second grind is added.

Grades we quote on this arabica

Grade is a defect count, not a different coffee. The same island lot is offered from Grade 1 down to Grade 6 under SNI 01-2907, so tell us the row your roast and your cost line need and we quote against it. Specialty lots are graded on the SCA table as well, and the grade you contract is printed on the grading sheet that travels with the container.

Frequently asked questions

Ordering, samples, shipping, and payment.

Which grade should a filter programme roast?

Grade 1 Toraja green, cupped 85 to 87. Lower grades available for volume programmes. Minimum 500 kg per profile and grade.

Is the roasted Toraja coffee certified organic?

Yes, to EU and NOP standards, with the green certified at the cooperative and the roast run in a certified organic production window so the chain stays unbroken. A transaction certificate accompanies each shipment. If you need the certificate issued in your own name, we arrange that with the certifier before the first run.

Why is this coffee roasted light to medium?

Because the clove, black pepper, and dark fruit that make the Toraja lot score 85 to 87 points disappear under a dark roast. Agtron whole bean 60 to 65 keeps them and suits filter and pour-over. If you want a darker version for espresso we roast it, but the flavour that justifies the price is largely lost.

Can this be packed for retail shelves?

Yes, 250 g one-way valve bags with your artwork are the standard retail format, packed 12 kg to a carton, with roast date and lot number printed on each bag and label content set for your destination market. We proof your files before printing and hold the film for repeat runs.

Do you ship this coffee ground?

Yes, ground to filter or pour-over at the point of packing, which limits oxygen exposure before the valve bag is sealed. Whole bean keeps aroma longer, so a buyer with grinding capacity should take beans. State the brew method rather than a micron figure and we set the grinder to it.
