Green coffee is unroasted coffee, and it is what you buy if you roast in house. These coffees come from Aceh and Lampung, East Java, Kintamani, Flores, and Toraja, arrive in 60 kg jute (GrainPro-lined on specialty arabica), and start at half a container on the small island allocations or a full 20 ft container elsewhere. Each one is offered across the whole grade ladder, and every listing publishes the four numbers a green buyer checks first: screen retention, the grade and its defect count per 300 g, moisture, and cup score.

The four numbers that decide a green purchase

Moisture between 11 and 12.5% is the first filter, because coffee below that band has usually been over-dried and bakes flat, while coffee above it loses weight in transit and risks mould. Screen retention tells you how uniform the beans are, which is what makes a roast curve repeatable. The defect count sets the grade under SNI 01-2907, from 11 defect values or fewer at Grade 1 to 151 to 225 at Grade 6, and it tells you how much of the bag you will hand pick out. Cup score is the last of the four, not the first, because a high score on an uneven, wet coffee will not survive the voyage.

Wet hulled, washed, and natural side by side

Indonesia hulls much arabica at 30 to 50% moisture rather than at 11%, the giling basah method used across Aceh and Toraja. Java and Kintamani are fully washed. Bajawa on Flores is natural dried on raised beds for 18 to 22 days. Three methods, three different greens, from one supplier and one grading standard.

What to do with green after it lands

Green coffee is hygroscopic and takes on whatever is around it. Warehouse it below 20 degrees Celsius and under 60% relative humidity, off the floor, away from spices, rubber, and cleaning chemicals, and expect the cup to hold for roughly nine to twelve months from arrival before it starts to fade toward papery. GrainPro or similar barrier liners slow that curve considerably, which is why we line the specialty lots as standard rather than as an upgrade.

What is the minimum order for green coffee from Indonesia?

One 20 ft container, about 19.2 MT or 320 bags of 60 kg, on Sumatra, Java, and Sulawesi lots. Bali and Nusa Tenggara lots are allocated in smaller volume and start at a half container of 9.6 MT. Mixed containers combining two or three lots from different islands are possible on the same booking.

How is green coffee packed and stowed for the voyage?

60 kg jute bags, GrainPro-lined on specialty arabica, stowed in a kraft-lined dry container with desiccant bags and a moisture indicator card. Coffee never travels reefer: condensation is what damages it, not warmth. The seal number and stuffing photos are sent the day the container leaves the warehouse.

Do you send green samples before a container is contracted?

Yes, 300 g per lot with the grading sheet and cup score, dispatched within two working days of the request. Sample courier cost is credited against the first contract. Once a contract is signed you also receive a pre-shipment sample drawn from the bagged lot, cupped against the offer sample before sealing.

How long does green coffee keep after it arrives?

Roughly nine to twelve months in a warehouse held below 20 degrees Celsius and under 60% relative humidity, longer inside barrier liners, before the cup begins to fade toward papery. Keep it off the floor and away from strong odours, because green coffee takes on aromas from anything stored near it.
